new recipe!

Ok, Thursday night I decided that I was going to do an "end of the month" supper. You know it's the end of the month and you don't really have enough of any one recipe item -- oh and you have a half hour before supper time LOL!

Here's what I did.

Anne's Alfredo
¾ box spaghetti (hint bottom)
1 stick margarine
1 small onion
2 Tbsp. minced garlic
¾ c. Parmesan cheese
1 can cream of potato/any
1 can evaporated milk

Cook the spaghetti - try to time it so you don't need to wait to add the sauce. Melt butter. Then add the onions and garlic, cook till tender. Add the Parmesan, cream of ...., and evaporated milk. Cook till it kinda comes together - then dump and mix with the spaghetti. Done!

Ok now to some hints for this.

Spaghetti noodles first. I've been taking the boxes of spaghetti I've been buying breaking them in half then putting them into wide mouth quart jars. I just kinda eyeball it till it's plum full. I used one quart jar for this.

You can use cream of anything for this. I just thought cream of potatoes would be nice. Just like any other ingredient on this list - completely possible to switch them any which way you want =)

We thought this could of used MORE sauce. Don't cook the spaghetti too soon and then add oil to it so the noodles won't stick -- makes it too oily. Might of also been the butter? Darkside thought it could use come cooked chicken. I think this would be a great recipe to put some breaded chicken strips on top of it and wal-la! a meal =)

this could be all done with food storage which is great!

back home

Well we're still packing and trying to get Mr. T (our house-sitter) settled in here at the house. We're hoping to leave Monday, but I don't see it happening. And since there are storms coming through on Tuesday who knows when we'll get going. But it's ok because we only have 5 billion things we have to show and explain to Mr. T -- anyone whose visited us knows nothing in our house is easy!

But I was sitting and thinking tonight of what to write about tonight -- other than I am sick! -- and realized I've never explain a main staple here in our house - Mom's Mix. I've been making it for about 10 years or so but never has it turned out as good as it has for the past few years.

Don't ask me the logic in I didn't have my OWN recipe perfected but..... HAHA!

Oh and if you didn't already know I spent all my grand naming up on #2 so lots of things have very bland titles in our house! Like Mom's Mix, things, stuff, and etc.

But anyway, Mom's Mix is kinda like Mrs. Dash - a mixture of seasonings with little to no salt (since my BP is high) My newest batch I made in a quart jar so it should last about 3 or 4 months.

Fill the jar up about 1/3 full with either season salt or Mrs. dash
Then fill the next 1/3 - equally with garlic & onion powder (I add more onion because I like it!)
Now on the last 1/3 put a little of each of the spices you have in your cupboard. Include all of them, but you may want to go easy on the baking/sweet ones. And of course don't include more salt!

Lately I've been adding some of my veggies that I dried last fall - once I chopped them up, but I don't always. Sometimes I'll throw the whole thing in the food processor so it gets thoroughly mixed up.

Last you just fill up an old shaker bottle (if you do it right you'll have 1 or 2 left after making this!) - I use an old Parmesan cheese bottle - then use on anything you would use salt & pepper or Mrs. Dash on. It's an absolute on fries, pizza rolls, pizza, and hamburgers in our house.

Oh and on another front -- Darkside heroically saved us $32 tonight!!! We're all so happy! He finally figured out the EASIEST way to replace a car tire onto the rim without taking it to a place to have them do it. He's tried it before, but it's always ended terribly - although the tire has been replaced during those instances. So YEA! He now knows the trick!!! =)

apple and pumpkin recipes

Brenda whose blog I read regularly is looking for apple and pumpkin recipes and I have a ton of them so I thought I'd add them here too.

Actually I only have 2 but I have a ton saved that I'd like to try sometime. So here goes nothing =)

The first recipe comes from my FAVORITE cookbook, which just so happens to be my 1st cookbook -- Betty Crocker's New Cookbook. If your ever wondering what to get a young person for a wedding gift, new house/apartment gift, or a whatever gift - this is the thing. It's VERY helpful with well tested recipes and great pictures. They have everything well sectioned and many hints & troubleshooting tips, even tips for hosting dinners. There are many versions of this book, mine is the 1996 edition.

Since I'm lazy I photographed it instead of typing (click to see larger) -

I have done the recipe on the left as pumpkin bread -- GREAT!

Here's the picture the book has of it -

Here's the other recipe I use & love -

(front)

(back)
definitely have to type it up! LOL!

Got this recipe from my aunt. We went to her house once for a visit and she sent us home with some. When we ate it we were in LOVE! She said she got the recipe from a cookbook she had but while making it she messed up with the amount of one of the ingredients. She didn't realize until after it was in the oven though. So she figured oh well, what's the worst that can happen? Well it turned out great! She later made the recipe the correct way and no one really liked it so back to the messed up recipe! So here is her messed up Fresh Apple Bread.

______________________________________________________________
Fresh Apple Bread
  • 1/2 cup white sugar
  • 1/2 cup brown sugar (she probably used light)
  • 1/2 cup butter or vegetable shortening
  • 2 eggs
  • 1-1.5 cups raw apples -peeled- and grated (do apples last)
  • 1 cup milk (she probably used 2%)
  • 1/2 tsp vanilla
  • 2 cups flour (she probably used all purpose)
  • 1/2 tsp cinnamon
  • 1/2 tsp salt (she probably used table salt)
  • 1/2 tsp baking soda (she does have powder crossed out here)
  • 1 cup chopped nuts (we usually don't add this & it turns out fine)
(1st) In a large bowl mix sugars, shortening or butter, eggs. Add milk and vanilla

(2nd) In a medium bowl mix flour, cinnamon, salt, baking soda. mix well.

(3rd) Add dry ingredients with the first ingredients a little at a time. It might get stiff dough.
Then add your apples*. The juice and apples will make the dough smoother. add nuts.

* do apples last so they won't turn brown. I peal the apples and cut into 4ths and put in cold water when I first start, then all you have to do is grate them. (she probably used a food processor for this)

Bake at 350 degrees for 50 to 60 minutes. watch it for doneness for your oven. (she had a propane gas oven) You can put it in greased loaf pans or cake pan.
______________________________________________________________

See what happened was after I got this recipe from her I thought wow that's alot of work (hey I am lazy!) so I asked if she had a good pumpkin bread recipe. She said instead of the apples add a can of pumpkin. She also said if you want zucchini bread instead just add the same amount of zucchini as apples and your good to go! So although I've ate this recipe, I've not made it the way it is wrote. I've only made it as pumpkin bread.

Here are some apple & pumpkin recipes I'd like to try & had saved for awhile -
In my opinion the Kraft Foods site is a great place to get inspiration and recipes. Although you do have to overlook some of their specifics at times - like use Jello brand gelatin, when everyone knows most times a generic brands works just as well.

And I'm not sure how much ANY of these recipes will help Brenda out but I wanted to try to help =)

good luck!

jello shots

Well I've got a great little story for ya today - it's all about our latest party. So last Monday we were chatting with a friend and we all got an idea. Wouldn't it be great if we all got together to drink and visit on Friday? OF COURSE! So he says I'll get ahold of everyone and let you guys know who all will be coming. Well we call on Wednesday and he says - I haven't been able to get ahold of too many and the ones that I have said probably not but they'd try. Well ok not the best but I figure - hey why not send out some last minute e-vites? Can't hurt right? So I get the old PSP beast running and come up with this -

Funny as all get out huh? Well it would be if ya knew the guy LOL! But anyway..... This generated a couple more responses, so it served it's purpose.

Friday was busy as usual - being payday and all (not including our whole hafta use the car fiasco - explain later). So we go by and ask our friend if he's found out anymore and he says no, not really. So we ask - SPECIFICALLY - are you coming? because we're going to buy some beer - if he's coming, if not no big deal (this friend is a MOOOCH - his words! - so we were buying this round). He say - OF COURSE! I will definitely be there!

So we go home finish the 5 billion things that needed to be done before anyone showed up. One of which is to make more (yes more!) jello shots. So I get busy. Here's all the things I'm overseeing - #1 is cooking supper, #2 is cleaning the living room, #3 is cleaning the bathroom & doing laundry, Darkside & #4 are watching TV. I'm going through emails, d/l'ing some audiobooks, doing jello shots, making sure the first 3 are doing their jobs.

So guess what happened? I ended up getting hurt - stupid Anne! While dipping the BOILING water out of the pan and into the measuring cup I splashed a little bit of the water onto my hand - which caused me to jump, did I mention BOILING WATER? So then I spill the almost half a cup of water in my hand on ME! Right on my stomach & leg! Here's what it looks like today - almost a week later (my stomach) -

UGH! If it looks like it hurts then it probably does! And this - it HURTS!

We made a total of about 70 jello shots - I always go overboard LOL! Well every time I've made less and always run out so I was aiming for more this time.

No one showed - at all.

So only about 4 of those jello shots were ate - by me =)

Needless to say, I will NOT be making jello shots again anytime soon!

And we've also gave up on the idea of having our annual Halloween Party this year. We definitely need to find better "associates" - at least more that have manners!

I really appreciate the 4 that had the courtesy to reply. You wouldn't believe that some people don't reply even AFTER the fact. Oh well.

So since I'll not be making jello shots anytime soon, I'll share the recipe =)

~~~~~~~~~~~~~~remember adults only!~~~~~~~~~~~~~~~~
~~~~~~~~~~~~~NEVER try to boil liquor!~~~~~~~~~~~~~~

Jello Shots

1 package Jello
1½ cups BOILING water
½ cup desired liquor

Directions - mix the boiling water with the Jello. after a couple minutes add liquor. then pour into desired vessels - I like itty bitty plastic cups. You can use anything from ice cube trays to cups or bowls. ALWAYS USE PLASTIC! unless you want to eat the stuff with a spoon.

Some variations -

Quick Set
½ cup BOILING water, mix with Jello & liquor, then add 1 cup ice. Also you can always put them into the freezer for about 45 minutes for a quick set.

Very Potent
do the water however (reg or quick set) but use ½ cup less, then add 1 cup liquor. People who do not drink alot will puke!

Jiggler-like
just add less water than usual - like a couple tablespoons to ¼ cup less.

Good Combinations (I've tried)
  • peach & whiskey
  • lime & gin
  • black cherry & hot damn! 100 proof
  • cherry & hot damn! 100 proof
  • watermelon & vodka
  • orange & vodka
  • orange & peach schnapps
  • strawberry & vodka

well there's all my secrets LOL!

gotta go for now
