inner seeds =)

M.D. Creekmore at The Survivialist Blog had asked "Who planted your “inner seed” leading to your preparedness lifestyle?"  I just had to put my story down and thought - "why not re-post here?" so here it is =)

My grandma, who was a child during the depression inspired me. Actually she yelled at me LOL! I was a stupid 19 yr old with 3 kids and an equally stupid 21 yr old husband. At the time I was sitting and trying to borrow money off her because they cut our aid check. I thought someone was supposed to help me but I wasn't helping myself. She yelled at me for a good hour and you know what? I didn't get any money either! =)

I didn't listen that time, but the next time she mentioned it I started getting a little worried. I don't know if I was more worried about us or her. She sat that day at her kitchen table and cried about how hungry they had been and about how HER mom had cried when they had nothing. For the next 3 years she told me more and more stories about hard times during her life both during the depression and while raising 7 kids with no money.

Each time I'd buy a little something extra or save that little bit of this or that. I still remember the first time I went shopping and came home with 10 bottles of ketchup - my husband was SHOCKED! I tried to laugh it off and act like it wasn't nothing, but it was. I was scared and rightfully so. There's no reason to go to the store everyday just to fix your normal meals!

You know out of 7 kids, 17 grandkids, and 26 great grandkids I wonder how many "talks" she's done of the years? I know her talking to me clicked a switch thankfully =)

She suffered with storing too much, for too long too. I think that it's a double edge sword. When she sold the farm about 10 yrs ago and moved in town she got rid of all that food. I noticed that now she has hardly anything in her cabinets or fridge. I worry everyday that she'll be ok when times get tough. But she's a tough old bird and will probably be ok =)

day 4: economic crisis

Ok first off let me say that this was MY day =)  Part of why we prep is for events like this. Let me explain. The challenge today was to help out a family friend with a vegetarian family of 6 for a day on short notice. One of the 6 is a baby. They showed up after breakfast and you had to be able to accommodate them for at least one day.

Well this was easy-peasy for me. Since I'm mostly vegetarian doing the meals wasn't hard at all. BUT since we had a low meat month last month, this month that's practically all I bought! So.......it was a little more difficult than usual. Especially since it was supposed to be a dinner for 11 vegetarians. Usually I'm just trying to feed one! Plus since the monthly food budget was already spent I couldn't even cheat and go buy something to add to the meals =(

But we did it! Here's some pics and explanations =)

(L-R, top-bottom)  Goulash with Italian seasoned bread crumbs, Parmesan & mozzarella cheese, and onions --- Goulash with Parmesan & mozzarella cheese and onions --- Goulash with onions

Goulash today was - elbow macaroni, onions, tomato sauce, veggie spaghetti sauce, garlic, basil, oregano, corn, re-hydrated button mushrooms, black olives

(L-R, top-bottom) salad with iceberg lettuce, carrots, onions, and tomatoes --- steamed zucchini & tomatoes with onions, tomato sauce and Mom's Mix --- (middle) vinaigrette --- pureed cooked apples -- pureed cooked carrots

The vinaigrette was made with about two-thirds olive oil, one-third red wine vinegar, 1/2 teaspoon garlic, 1/2 teaspoon Italian seasoning. I'm not sure if it's a proper vinaigrette or not but I like a combo like this for on top of salads.

The baby food I pureed in the food processor after steaming. I just chopped the heck out of them and added some water so it would be more liquidy and I also added about a teaspoon of brown sugar to both to help sweeten them some. I never made baby food for my kids when they was babies - don't know anyone who did. But I know how we introduced table foods to kids in our family was to chop the heck out of it and if you can add a little sweet to it cause most babies will take to something sweet first. I now know that this does lead to some bad habits for kids but if that's what it takes then by all means, I say do it! =)  ***NO HONEY!***

(L-R) Anne's Alfredo -- steamed brocoli

Anne's Alfredo tonight was made without onions, commercial cream of soup, or evaporated milk. I used my new favorite cream of whatever mix (it's similar to this one). I'll have to post my recipe soon =) But I did use some corn, re-hydrated button mushrooms, and lots of black pepper. Let me tell you it was bland as HE**! But it was edible so I think it counts =)

(L-R) steamed pureed carrots -- mashed bannana

I did so many variations because it didn't specify what kind of vegetarians this family was. So with lunch I think I had all possibilities covered when it came to supper though I failed to provide different possibilities.

As to the rest of the challenge (besides food) we would of had no troubles with accommodating the family -- although they sure wouldn't of been at peak comfort.  Our house is set up for a family of four -- we stretch it to a family of six on a normal day so 2 families of 6 would of been a BIG stretch! But yes, everyone would of had a place to sleep =)

Now on to the money lending part, needing extra tp, and running out of eggs and milk. Ok lets go in reverse order to explain.

Running out of eggs at this time of year is almost impossible! SR's hens are laying about 5-9 eggs a day. Now in the dead of winter this is a possibility though. But I do have backups in place for those times. They are powdered eggs, powdered egg substitute, and frozen eggs from summer. The milk isn't very likely for us either as we stock up in multiples of powdered milk and canned evaporated milk. In fact this is the ONLY milk we use here unless it's a special occasion. But, at any rate, we didn't use but 3 cups of made powdered milk and no eggs because we DO understand that there IS that possibility to have NONE.

tp 1.16.07Image by kmevans via Flickr
On to the fact that we were low on tp and do NOT have an extra storage of it. This challenge happened ON check day which now runs every two weeks in our house -- just switched from a one week pay period last month. We were low on tp for 11 people but it would of lasted for at least one, possibly two days so I think it's safe to say that we would of been ok. I can never seem to stock up on tp though! Maybe it's just me or maybe other large families with teenagers have this same problem? Not sure but I'm constantly trying to work on this =)  I would love to have about 12 packages of 24 rolls saved up! That would be 6 months worth for us.

Now to the fun part - lending money! Now let me start off with saying I'm a VERY giving person especially with my friends and family - but there's no way I'd just fork over $100 without some pretty dire straights going on! Quite frankly I'd help them with MAYBE $20 but really I don't think I could loan or give someone more than that when they obviously are too stupid to prepare themselves. I've been down and out but I still wouldn't be so bad off that I had to ask a friend (not family!) for such a large amount, which quite honestly probably would the amount you would need to fund the WHOLE trip.

I know that's not what the challenge said though. The challenge was worded as - do you HAVE that amount that you COULD give them. Not that they necessarily asked for it but more along the lines - could you offer it to them? Or at least that's the way I took it. And yes since it was payday we could have - any other day? NO! We are lucky people who are broke BEFORE we get the pay check cashed LOL! Could I even between pay checks come up with about $20 - yes! You would not believe the amount of money you have laying around the house when you go digging. Plus I could also borrow it from someone - not that I like to do that though.

Plus I also know that there is also help that a person can get from the local police stations - well at least you used to be able to in Illinois and Iowa. If you go into the local police station and tell them that you are stranded they will give you either some money or a voucher for gas at a local gas station. Now let me say I have never done this myself but this is what I was told by more than one person - this is what they had to do more than once to be able to get home while "stranded" in a far away place (usually within a couple hours from home). I assume you probably would have to tell them where you live and how you ended up in the position your in but all in all it's probably worth it.

Now granted I understand this isn't the way to do things. But when you've made such bad decisions in your life that you are homeless and without money then these are times that you'll learn from your mistakes. How will a person learn if they don't experience some discomfort? When someone has EVERYTHING handed to them they have no initiative to learn to do it themselves and correct their wrongs. I in no way believe that someone should be treated wrongly but I don't think it hurts anyone to do a little learning!

Here's our report card for today -

We had alot of fun doing this one - it was a nice change from the other days cause we could actually do all of it! =) Although we went out later in the evening and so I didn't get it posted till today.

day 3: EMP

Well today was -- .......a severe terrorist attack.......causing an EMP.........

We totally dropped the ball on this one =(   This type of emergency just scares the CRAP out of me! So I spent today trying to learn more because learning more usually helps alleviate my fears. Well so far I'm still scared! =)

We did as a family do a mock evacuation and talked about all potential way we would either leave or stay and routes. During this mock evacuation we talked about ways to get ready (stay or go) and actually timed it. We could of got done and ready (to stay or go) within 20 mins which isn't too bad for a 1st time =)

But other than the trial run and talking we didn't do anything else on the challenge. We'll have to work more on this over time -- it's alot for kids to comprehend, heck it's alot for adults!! =)

Here's our report card (click for larger view) -

Day 2: dietary limitations

Ok well to start off this is my oldest son's 17th birthday. A tradition we have in our house is that the birthday person gets to pick out their cake & design and what we have for supper. Yep - we were screwed for today before it even started LOL!

I think I will recreate this challenge sometime when the 7 day challenge is up -- like the day after! I really wanted to do this one, it would of been kinda easy for us. But on to what we could do =)

I'm going to copy straight from their site so I get things straight =)

Today’s Tasks:
  • Cook breakfast from scratch - NO!
  • Cook lunch from scratch - NO!
  • Cook dinner from scratch - NO!
  • Bake a loaf of homemade bread - NO!
  • Print out some of your favorite recipes to use in case the internet is down during an emergency - YES!
Today’s Limitations:
  • For this day, and ALL days of the challenge: no spending money, no going to stores, and no restaurants. - YES!
  • Do not use ANY pre-packaged or convenience-type foods. No mixes, boxed cereals, canned soups or sauces etc. If you can’t pronounce all the ingredients and say where it came from, it’s probalby a NO go. - NO!
  • Do not buy or borrow ingredients. Use only what you have stored. - YES!
Advanced Tasks:
  • Make a delicious dessert from scratch. - NO!
  • Plan an entire week worth of meals you could make out of your current food supplies. - YES!
  • Do some research on the health benefits of eating less preservatives. - YES!

Here's our report card, surprisingly we got a half decent score (I guess?) -

And can ya tell I figured out a way to print out the report card better? I selected the option as if I was printing a fax - worked like a charm! =)

Day 1: water contamination

This year they have a great little report card you can print and fill out - which would of been so much cooler if it would have been more black ink only friendly. But it was still great to be able to give yourself a "grade". Last year I think here on the blog I may have been more harsh than needed on what we did do.

Ok - today I read the challenge before I went to bed at 3AM (I know - up too late!). I immediately told Darkside - "GREAT! We're dead already!!" LOL! We recently bought the jugs needed to actually start our water storage but they are mostly still full with the punch that came in them =(

So I went to bed pretty depressed last night figuring that we were doomed
.

This morning I got up and told the kids that the challenge started and that it was about water. They didn't really ask and so I didn't tell them. And then it dawned on me! I'll spring it on them awhile before bed. I'm such an evil mom   }: |

So we did at about 8:30 tonight. They all did pretty good - I"m surprised! Oh - don't get me wrong - #3 didn't surprise me at all. Survival prep is his new passion -- he studies books on this stuff for more than 12 hours everyday! But I thought they all did REALLY good.

Here's our report card -

Right after we were done we got to work on the jugs we did have empty - they are ready to go for a real emergency now =)
Clean drinking water...not self-evident for ev...                                                                      Image via Wikipedia

I had Chiam & Alexis go shut off the water and for the whole time we went through the scenarios the water was off. After our winter in Iowa Falls 2008/9 we're still pretty resourceful with finding and using water. Don't get me wrong I KNOW that if the water was off each one of us would flick that handle on the toilet more than once LOL! But we're pretty good about other things we do with water.

7 day challenge again!

It's that time again - WOO HOO!! Challenge starts today =)
This year we are doing things a little different. Last year we had to follow certain guidelines since we weren't living in our own house -- but not this year! We are throwing each challenge on this kids - and us - but we more than likely will not be following exactly what is said. Although we have discussed about whether we should do something like that together but not sure when.
Real life for us is constant survive-mode. Everyday we have some obstacle that we're trying to work around. Granted nothing real major, usually, but still....

new recipe!

Ok, Thursday night I decided that I was going to do an "end of the month" supper. You know it's the end of the month and you don't really have enough of any one recipe item -- oh and you have a half hour before supper time LOL!

Here's what I did.

Anne's Alfredo
¾ box spaghetti (hint bottom)
1 stick margarine
1 small onion
2 Tbsp. minced garlic
¾ c. Parmesan cheese
1 can cream of potato/any
1 can evaporated milk

Cook the spaghetti - try to time it so you don't need to wait to add the sauce. Melt butter. Then add the onions and garlic, cook till tender. Add the Parmesan, cream of ...., and evaporated milk. Cook till it kinda comes together - then dump and mix with the spaghetti. Done!

Ok now to some hints for this.

Spaghetti noodles first. I've been taking the boxes of spaghetti I've been buying breaking them in half then putting them into wide mouth quart jars. I just kinda eyeball it till it's plum full. I used one quart jar for this.

You can use cream of anything for this. I just thought cream of potatoes would be nice. Just like any other ingredient on this list - completely possible to switch them any which way you want =)

We thought this could of used MORE sauce. Don't cook the spaghetti too soon and then add oil to it so the noodles won't stick -- makes it too oily. Might of also been the butter? Darkside thought it could use come cooked chicken. I think this would be a great recipe to put some breaded chicken strips on top of it and wal-la! a meal =)

this could be all done with food storage which is great!

my thoughts on the seven day challenge

First let me say that I really appreciate all the hard work that the ladies who did this challenge at Food Storage Made Easy. I'm sure it can't be easy setting all this up. I enjoyed being challenged and running through the scenarios even if I didn't actively enter in the contests.

But I do have to say that I expected more of a challenge. I don't know exactly what I expected but I figured it would be ....... more?........... something.

I believe that this challenge was a good one for anyone just starting down the path of emergency preps and food storage. I have been at this for quite a few years now so these challenges in some parts weren't very challenging. Not that someone who's been at it for awhile doesn't need this! Heck I check through all my stuff at least twice a year. And a random in between check showed me some areas that I need to pay more attention too.

And there were some things that I thought of that I do need to add. And re-affirmed reasons why I don't have "such and such".

Over all I am glad I participated, even if it was in my own way! =)
Make sure you check out their site and if your new to food storage check out their Baby steps checklist.

Seven day challenge --- day 7

Day 7 - emergency treats?!?!

This was actually done on Tuesday so obviously I didn't actively participate. But through this whole challenge each day we run through and see if we could of made it. This is the last day of the week long challenge.

Limitations for today are : (all days you can't spend any money)
  •  no fresh butter
  • no fresh eggs
  • no fresh milk
  • make a delicious dessert
Advanced :
  • do this with no perishables or pre-made mixes
-------------------------------------------------------

Yes we would of been able to this easily. Sweets are a main part of any good food storage. And being able to make them without any number of key perishable ingredients is a must. Although I am lacking shelf stable butter, I have the knowledge of what things you can use in place of butter which is a necessity.

later...

Seven day challenge --- day 6

Day 6 - it's health problems?!?!

This was actually done on Monday so obviously I didn't actively participate. But through this whole challenge each day we run through and see if we could of made it.

Limitations for today are : (all days you can't spend any money)
  • no prepackaged or convenience foods
  • must have low sugar breakfast
  • must have low fat lunch
  • dinner from scratch using whole grains and/or legumes
  • must have 3-5 servings of fruits and vegetables
Advanced :
  • figure out how many calories, sugar, fat and fiber are in your foods
  • do all of this for whole family

---------------------------------------------------------------------------

Ok I understand that something like this could be sudden and somewhat of an emergency but really? This shouldn't be something that is sudden. And if you had prepared for something such as this, wouldn't you be pretty much insured you wouldn't have something like this happen?

Maybe I'm just jaded in some way.

If something like this was to happen to me or someone in my family I would go home sit down and re-assess our food storage and menu. Then I would adjust everything accordingly. If that meant going and buying new or different foods then so be it.

To me it would be no different than any other change in our family. All changes require you to re-assess things. Some changes we've went through are - new pets, new children to care for, new babies, and dietary requirements.

Like I said maybe it's just me.

September 12, 2009

Day 3 - it's unexpected dinner guests!

Day 3 - it's unexpected dinner guests!

This was actually done on Friday so obviously I didn't actively participate. But through this whole challenge each day we run through and see if we could of made it.

Limitations for today are : (all days you can't spend any money)
  • an appetizer
  • no meat in main course
  • 2 side dishes
  • a dessert
  • other family member help & table set nicely
Advanced:
  • you have 1 hour to do this in

----------------------------------------------------------------------------

Honestly this wouldn't happen with us. Maybe we're just unsociable but someone wouldn't just invite themselves to our house for dinner let alone have specifications on how that meal should be!

I guess it's not being unsociable but I expect people to respect me & my home enough to either go about things differently or something. And if they don't respect me enough then I will demand it - plain and simple.

I do understand the point in this though, don't get me wrong. And I could even see some family and close friends trying something like this. Although it would only happen once it would still be an emergency. And I could see attempting to cater to this person but not in anyway it would interrupt our normal meal.

I could completely see something like this happening---> see "so-and-so" at the store and them say hey we ought to get together for a bbq tonight! Our bbq's are usually planned out beforehand so this would be an emergency of sorts. I have things to throw something like that together usually on hand. Also I have a few go-to recipes that I use for get togethers.

It's my belief that if someone is to dine with others and they have a specific taste they should provide for themselves. Not that someone CAN'T cater to that person if they would like or if it correlates with their tastes, but they don't HAVE to. Allergies are a different cup of tea.

Overall I think if an impromptu event was to come up where we needed to feed others in a formal-like setting was to come up we could do it pretty easily. But overall we aren't a frilly dine together kind of family -- break out the mis-match plates or paper plates and skootch over the couch ain't just for you!

garden update

shiny clean jars, check!Image by Chris Radcliff via Flickr
Yesterday I was able to get more jars thankfully! Why is it that all stores see canning as a seasonal thing? It's not! You can do it year round.

I had to go to 2 different stores to pick up 6 more cases. I really wish I could of found some at a yard sale or something. I've spent probably about $200 on jars this year alone! It's a good thing that they can be reused!

I've only got about 12 jars of stuff that I've gave away in the last year. I've not got even 1 jar back.

Salsa in the rawImage by SuziJane via Flickr

I've got enough tomatoes ready to go for salsa, but I don't have enough peppers. They just aren't growing for me this year at all.

Next I'm gonna start hitting up all the people I've seen with apple trees in their yards for free apples! Apple butter here I come!

stuff

Been awhile since I've posted, it has been to hectic here! That and I've been too sick!

I was sick the past 2 weeks - you name it, I had it! I thought I was better this past week but nope. In fact this morning I woke up coughing - UGH!

I also had the GREAT fortune of stepping on a rusty nail last Monday. So I had to go get a tetanus booster =( Good thing about that is it didn't hurt like it did back in junior high LOL!

One by one everyone else in the house has been sick too except SR. It is truly a sad sight to see your little 5 year old girl hold her head and say - my head's hurting. =(

Well the Kaos King didn't get sick per say but did suffer a massive out break from something. He was swelled up really bad. We still don't know for sure what it was. We took him to the hospital but the quack out there spent a total of 50 seconds in the room with him so I don't think it's possible she got the diagnosis correct. She said poison sumac. But his brother was with him and didn't get it? Oh well they gave him a steriod shot and some steriod pills and that cleared him up. And once he stopped itching it has all went away.

This all happened with the Kaos King because he was hired to do some yard work for a neighbor. They even paid him $6 an hour, which he loved! I told him to let #3 go down there with him and help out. He made $20 which he put with the money he made from them earlier this year so he can buy a new mp3 player. It took me about a week to pick out the best one for his money but I finally did and it's on it's way here!

On the garden front --
Our fall garden is all planted and mostly sprouted now. I made sure and left LOTS of room between things in it LOL! Thats because I crowded so much in to the other garden and it was a pain to harvest things. I've had hardly no luck at all with the onions I planted which really sucks! The other stuff seems ok so far.

We have been pulling out all kinds of plants because they are done. So far here's the list of what we've pulled -- cucumbers (thankfully!!), zucchini, spagetti squash, corn, onions, garlic, a couple extra cabbages, some of the pumpkins (both kinds), and slowly pulling beans here and there. For some reason even though we counted the days for proper pumpkin and winter squash planting they all finished WAY early! Darkside was very upset since his pumpkins are ready now and it's not October yet!

We FINALLY are getting tons of ripe tomatoes!! And peppers too! And a couple big eggplants, too. I've made 2 batches of salsa so far =) It's so nice to have ripe tomatoes that we grew!

I also made some dilly beans -- we don't like them LOL! But we tried =) I've been pickling almost everything in sight lately. There were just too many cucumbers!

Oh then a neighbor brought down some more cause she said they couldn't use -- SURE! LOL!

Tried to be nice and give some of our abundance to a friend but he don't want it =(

We've also been trying to remodel the bathroom, which hasn't been working out the best. I've also been trying to talk SR into building another addition onto the house. The addition that I'm proposing is only 10' x 20' which don't seem like much but I think it would make so much more room here. I really need more room so I can get all my food here and not at the storage place. Everyday we think of something else that is in storage that we need to go get. There is only 2 very small food cabinets here. They are like 2' x 2' !! I have all the rest of the food stored in various spots through the house, in the van, and in the trunk of my car!

Oh and.... We are attempting to incubate some eggs!! We had 12 in there but we candled them last night and there are only 5 that might be ok. Well actually SR thinks that those 5 might be ok. Personally I think that they are duds too. I believe that the rooster is still too young or not "manly" enough! But we are going to keep trying! It would be so cool if we could hatch our own babies!

Also on the chicken front - we have decided that the broiler/fryer/whatever they are definitely HAVE to go! And I say that we are SO not ready to do our own slaughtering! I don't think SR is really wanting to do any slaughtering anyway. Plus I'm thinking that his way of slaughtering - old school - is not the way I'd like to eat my chicken. Not exactly the cleanest method of preparing, know what I mean? =)

And the nearest meat processing place that will accept chickens that I could find online is about 100 miles east of here =( So we are going to do things the easy way -- take them to the auction! LOL! We found a once a month auction that isn't too far away that does small livestock. We was wanting to go to it anyway might as well make some money too! But really even if we have to give the stupid things away it'll be better than nothing! They eat tooo much!

Ok I'll stop now - this is WAY long as it is! That's the update so far though =)

How Does Your Garden Grow

This week I'm going to be lazy and mainly post some pics =)

Did you see our new toy? YEA!! Finally we can till whenever we want!

Also wanted to share about our rooster, he's starting to crow. And he's feeling very cocky can't you tell? LOL!

This last week we've done tons of pickling and dehydrating. Tonight we did 2 batches of jam too. Now I have to wait till I go grocery shopping to do anymore canning (that's Sat.).

Tomorrow we will begin planting the rest of the fall garden. Here's what we got - 2 small kinds of cucumbers, more zucchini, tomatillos, peas, 2 more tomatoes, baby corn, more onions, broccoli, more green beans, and more radishes. I already foresee problems with the tomatoes and tomatillos, but oh well, we'll try!

How Does Your Garden Grow

How Does Your Garden Grow?

Stupid Anne! STUPID %#*%%#@!! &*#@&*!

Sorry had to do it! We now have powdery mildew. And it's probably my fault.

I bought some marked down herbs about a week ago from Walmart. I thought that the rosemary looked funny but I just figured it was because it was being killed. LOL! Nope it has powdery mildew.

Which in and of itself ain't too bad. My herbs are about 75 feet away from the rest of the garden.

That. ain't. far. enough. at all!

Now the jack o' lanterns have it. Also, the spaghetti squash and zucchini.

So first we hacked some of the badly affected leaves off the pumpkins.

Next we are going to try a milk spray. I sure hope it works.

Some better news. The reason I'm posting this Friday instead of Thursday is I spent yesterday dealing with powdery mildew and I canned 5 quarts of cucumber dill relish! That used up 8 pounds of cucumbers. I have another 11 pounds ready for sweet relish too, gotta get more jars. I've also been dehydrating zucchini like crazy.

Here's a crazy looking cuke that I used for relish yesterday. It's like this because it grew around a fence panel =) Taken with my phone - not a great pic, but I was very busy! Oh and don't be alarmed with my orangish cuke LOL! I've found that alot of them are like this when they don't get picked like they are supposed to --hidden-- =)

I also finally got the rest of my box done. Right side we did last week, left side just last night.

Here's the planting order from r-l, radishes (2 kinds), carrots (2 kinds) ----that's the right half ---- onions (2 kinds) ---- 1 pot is huckleberries & 1 pot is bunching onions. I'm messing with this because the ground here has never been worked and it is VERY compacted. So I'm hoping that by doing a raised bed that I will be able to get some good root crops =) Here's my radishes already!

so it's a growin' ! =)
